This is most certainly because your mixer settings are wrong IMO. Remember: 
There are different settings for sound output and sound recording! (You have 
to select which channels to record, for example.)

Check that you're able to record the sound you hear with _any_ sound program. 
Even a program that visualizes sound will be OK, as long as it does not 
visualize data which it plays (e.g. no xmms, but for example krecord). Make 
sure that with xawtv in the bg, its sound can be recorded. _Then_ mencoder 
can record it, too.
