Well, Alsa 9 is the ticket, apparently, as I just watched the first fifteen minutes of a DivX movie with AC3 audio and I was able to get full 5.1 decoding. Since this appears to be a common problem on the mailing lists, I'd like to offer to contribute some documentation for mplayer for people to help get this working?
