Guru?  No.  You do, however, need to understand the basic concepts.

Try and find ONE video encoding program anywhere, that will "just work."
 You won't be able to.  If anything, Mencoder is raising the bar and
complaining that it needs to be far easier is... naieve to say the
least.

If you just want to record from a TV tuner card, and play it back on an
interlaced display, it is rather easy to do that.  Where it gets tricky
are the OTHER sources...  Squeezing the most quality out of the fewest
bits...  Modifying the video...  Converting from one set of codecs and
file format to another...
