Because I'm still a newbie. You see, I've spent so much time trying to figure 
out how to get the audio and video synchronized that the top quality was at 
the moment not the issue. Mjpeg was 'good enough'. 

And I wanted to keep low cpu usage because everybody was telling me perhaps my 
system was too slow.
