For accepting, or for preseting?

If you're uploading, YouTube will accept quite a lot. ;-)

For streaming, I see most docs recommend H.264, but I understand
they also accept HEVC and VP9. VP9 is probably even slower to encode
though.

For content delivery, YouTube prefers VP9.
