[FFmpeg-cvslog] fftools/ffmpeg: share the code encoding a single frame between video and audio

fftools/ffmpeg: share the code encoding a single frame between video and audio

Call do_video_stats() for every video packet produced by the encoder,
rather than for every frame sent to the encoder.
