You can do as you like.  Actually, I'm using 480x576 most of the time.
I do pass `aspect=4/3' to lavc, of course.

A command I use often is:

mencoder -tv driver=v4l:width=480:height=576:chanlist=europe-west:volume=65535:adevice=/dev/dsp2:audiorate=32000:on:buffersize=400 -oac mp3lame -lameopts cbr:preset=128 -ovc lavc -lavcopts vcodec=mpeg4:vqscale=2:vhq:aspect=4/3 -vop pp=tn/lb -o /home/media/vcr-`date +%y%m%d-%H%M`.avi

/dev/dsp2 ist my btaudio device.  This works realtime most of the time
for me.
