RTFM, it's all in the manpage:

subs from dvd -> vobsub-file:

        -dumpsub (MPLAYER only) (BETA CODE)
               Dumps the subtitle substream from VOB streams.  See 
-dump*sub and -vobsubout*  options
               too.

audio to pcm:

mplayer -dvd 1 -vc asdf -vo null -hardframedrop -ao pcm -aofile audio.wav

will dump the audio from the first dvd-title to the file audio.wav
