Get the source RPM and do
rpmbuild --rebuild --with menu --target XXX mplayer-0.91-1.src.rpm
(where XXX is your CPU designation in RPM terms, i.e. i686, see rpm docs).
The resulting RPM will have what you want compiled in. Also see the top
of the specfile for more build options.
