You don't press enter, you use a mail client that handles this automatically. 
And one that handles linebraking quotes correctly too which is why you 
shouldn't use Outlook (and probably some others). Outlook can break the line 
at <x> chars, but will not do it correctly in quotes (if it doesn't produce 
TOFU anyway).
