put it all in one -vop call as a comma-separated list like this: -vop

I have a movie which is 720x576 pixels big: pixel aspect is obviously 1.25:1; however MEncoder (and MPlayer) says that correct aspect for this movie is 1.78:1 (and of course this is true) and just after that starts to scale the video to 1.78:1 aspect which gives 1025:576 pixels. Question is: how to turn off this automatic-aspcet-correction and how to control which dimension (w or h) is chosen as base (in my case the height)

use a format with correct aspect ratio as your rescale argument, i.e.
use dimensions x and y so that x:y=aspect. Also make sure that both x
and y are multiples of 16. Something like 640x360 (16:9) or 640x272
(approx. 2.35:1) will be a good start for most movies
