I do use such a script occasionally, although i personally prefer to
experiment with each encode job manually using the command line.

However i still think the profile idea is easier from an end users point
of view.  It would provide a selectable set of defaults while allowing
you to simply add or override more options with the rest of the command
line.

With either the scripts of profiles there's an opportunity for more
community involvement with people providing scripts/profiles that work
for them to be posted in a contrib section on the Mplayer site.
