I'm using alsamixer, as I use alsa 0.9 with oss emulation, but usually your 
windowmanager should have a mixer tool like kmix on kde and wmmixer on 
windowmaker, but as said above mplayer can do it itself in most cases.

btw from manpage:
              / or *          decrease/increase volume
 
              m               toggle using master/pcm volume
