it's a matter of history, common use, hardware support and editing 
tools:  the encoding craze
began when cpus and software began to be powerful enough to handle it 
almost in real-time
and the only software available at the time was virtualdub, that saved 
(and still saves) only avi,
most of the times with mpeg4video.
Mpeg is still considered by many a special purpose container, although 
it's not
(but it surely sucks in many respects).

mencoder doesn't output only video; what about
