Generally speaking I'd go with "little-endian" and "big-endian" - except
of course when wanting to refer back to the origin of the terms, in
which case it's "Little-endian" and "Big-endian" AFAIR. I do, however,
find myself unable to tell quite why...

(In case you haven't noticed, I'm perhaps excessively fond of hyphens.)
