I can at least confirm your findings. It may be a color space issue.

FWIW, ffmpeg, the recommended tool of choice, does things correctly:
ffmpeg -f image2 -i IMG_%d.JPG -c:v mpeg4 -pix_fmt yuv420p time-lapse.03.avi

(Your codec fine-tuning parameters may vary.)
