Yes, but channel order is likely to be completely wrong.

Makes no difference. You can't copy 2 channels from a 6 channel
stream. The multi-channel audio stream is either copied, or not.

You'll have to encode each of the tracks seperately, and individually
add them to the final video. With what tool (for vobs), I don't know...
