I am not sure I understand what you mean with 
"Dolby 5.1" (is that something that FFmpeg prints?) 
but the difference between "5.1" and "5.1 (side)" 
is the position of the surround speakers:
Both are FL - FC - FR - LFE, the two additional 
speakers are BL and BR for "5.1" and SL and SR 
for "5.1 (side)".
