FFmpeg is not perfect at remuxing either.

Then I am surprised that you have issues understanding
the FFmpeg documentation: It was heavily influenced by
the usual *nix docs.

Then I sadly fail to understand any of your questions: FFmpeg is not a
simple tool, but is mostly trivial for people with digital video and command
line experience.
