There is also the FFmpeg Community Contributed Documentation Wiki:

Contains various articles and guides and can supplement the official
documentation (http://ffmpeg.org/documentation.html). Since it is a wiki
the quality and up-to-date status of each article may vary, but it is
targeted for the general user and anyone can contribute.
