Increase the resolution, and use a specific video codec -

ffmpeg -y -f alsa -i plughw:0,0 -f video4linux2 -s 640x480 -i /dev/video0 -preset ultrafast -b 20000k -vcodec libx264 out.avi

And use alsa instead of OSS.
