i dont really get the problem

- x264 sets the profile according to the used settings, so when encoding for
the ipod you need to enable only the settings the ipod handles and x264
automatically sets the correct profile (no need for the user to mess around
with profiles himself)
- in x264 there is an option to set the level, why not simply offer it to
the user via ffmpeg too, like any other codec option?
- in x264's own cli encoder it also passes the profile and level to the gpac
library which does the mp4 muxing, signalling the correct profile and level
automatically in mp4
