[FFmpeg-cvslog] doc/filters: re-edit notes on filtergraph escaping

doc/filters: re-edit notes on filtergraph escaping

State the escaping rules more explicitly, reword various sentences and
drop confusing quoting example.

Should fix trac issue #3334.
